Recipe: Paleo Apple Pie Bites

These little bites pack a nutritional bunch. They’re easy to make, easy to transport, and full of clean ingredients that will fuel you up for any adventure without weighing you down. They taste pretty good, too. 

Just eat two of these bites per hour of activity, ideally every 30 minutes or so. For more strenuous workouts, eat one every 20 minutes.


Nutritional info (per bite):

  • Calories: 50
  • Total fat: 3 grams
  • Total carbohydrates: 6 grams
  • Total protein: 1 gram


Ingredients (makes 40 bites):

  • 1 cup raw pecans (preferably sprouted)
  • ½ cup raw almonds (preferably sprouted)
  • 1 ½ cups Medjool dates, pitted (about 10-12 dates)
  • ¾ cup dried apple rings (no sugar added)
  • ½ tsp. ground cinnamon
  • pinch of sea salt



  • Put all ingredients in a food processor.
  • Pulse until the nuts are roughly chopped.
  • Add 1 tbsp. for filtered water at a time until ingredients are formed into a dry but moldable goo.


  • Using a small ice cream scoop, scoop out the batter and roll into bite-sized balls.
  • Place in a Tupperware container and store in the refrigerator up to one week.
  • These will travel well, wrapped in parchment paper and aluminum foil. They can be kept unrefrigerated for up to one week as well—they’ll  just be much softer.
