Recipe: Skottle Sausage and Egg Tacos

These simple tacos can be whipped up in 10 mins flat. They make a great breakfast or make-ahead lunch that you can eat out on the trail during your adventure. Just wrap them in foil, stick them in your pack, and you’re ready to go!

This recipe was written to be cooked on the Tembotusk Skottle camp stove, but it’s not hard to adapt it for a wok or a regular grill.

Nutritional info (per taco):

  • Calories: 246
  • Total fat: 16 grams
  • Total carbohydrates: 13 grams
  • Total protein: 14 grams

 

Ingredients (makes 8 tacos):

  • 1 lb. sausage, removed from casing
  • 8 cage-free eggs
  • 8 Siete brand Almond Flour Tortillas
  • 1 avocado, peeled and diced
  • pinches of sea salt and black pepper
  • Optional: crumbled goat cheese, chopped chives, fresh cilantro and/or fresh spinach

 

  • Heat the Skottle to medium-high heat. Place the sausage in and break up with a wooden spatula. Stir occasionally as the sausage cooks, continuing to break it up further until it’s completely cooked through.
  • Remove the sausage and place it onto a paper towel or napkin-lined plate. Leave some of the fat in the pan of the Skottle.
  • Crack eggs into a large bowl with a pinch of sea salt and black pepper.  Whisk until completely scrambled.
  • Pour into the Skottle over medium heat and cook to desired doneness; turn off the heat.
  • Place the sausage back into the Skottle and toss to combine with the eggs.
  • Divide the mixture between all eight tortillas. Top with avocado and desired garnishes and serve or roll up, wrap in foil, toss into your pack and they’ll be ready to eat in the middle of your adventure.
  • These can stay in your pack, unrefrigerated for up to two hours. Any longer than that is pushing it.
