Recipe: Grilled Chicken Skewers w/Honey Mustard

These skewers are just as easy to prepare around camp as they are at home.

They can be eaten on their own, or paired with just about anything for a meal. I personally like to dip them in my own Paleo-friendly honey mustard aïloi.

 

Nutrition info (per skewer, without aïoli):

  • Total calories: 240
  • Total fat: 4 grams
  • Total carbohydrates: 7 grams
  • Total protein: 44 grams

Ingredients (makes five skewers):

  • Bamboo skewers, soaked in water for 30 minutes before using
  • 2 ¼ pounds boneless, skinless chicken (thighs and/or breast), cut into 1 ¼ inch cubes
  • Zest and juice of 1 lemon, 1 lime, and 1 orange
  • 1 ½ tsp. sea salt
  • 1 tsp. black pepper
  • Ghee butter (for greasing the pan/grill) 
  • Honey mustard aïoli
    • ½ cup avocado oil mayonnaise (I suggest Primal Kitchen brand)
    • 1 tbsp. raw/local honey
    • 2 tbsp. yellow mustard
    • 1 tbsp. Dijon mustard
    • 1 tbsp. honey mustard
    • 2 tbsp. Bragg’s apple cider vinegar
    • Pinch of sea salt and black pepper

 

Directions:

  • Cube chicken and place it in a large Ziploc baggie with all other ingredients, excluding aioli. Seal baggie and toss well. 
  • Refrigerate chicken for at least one hour, up to overnight.
  • Stick four or five pieces of chicken on each bamboo skewer and grill them! The skewers should reach 160 degrees Fahrenheit.
    • If grilling on a campfire or grill, place the skewers directly in a cast-iron skillet greased with ghee butter. Cook for 10-12 minutes, turning occasionally.
    • If cooking on a stovetop, just use a nonstick pan. Cook on medium heat for 12-15 minutes.
  • Transfer skewers to a plate to cool.
  • Combine Honey mustard aïoli ingredients in a small bowl and whisk.
  • Coat skewers liberally with aïoli and serve!
