Recipe: Coconut Sugar Cookies

These little snacks will feed your sweet tooth but won’t leave you with a sugar hangover.

They make great, clean fuel for almost any adventure. I recommend eating one or two 10-15 minutes before activity or any time during an all-day adventure.

Nutritional info (per cookie):

  • Calories: 66
  • Total fat: 5 grams
  • Total carbohydrates: 5 grams
  • Total protein: 2 grams



  • 2 cups almond flour
  • 2 tbsp. coconut oil, melted
  • ½ cup coconut palm sugar
  • 2 eggs
  • 1 tbsp. vanilla extract
  • ¼ tsp. fine sea salt



  • Whisk all wet ingredients in a small bowl to combine.
  • Whisk all dry ingredients in a medium bowl to combine, getting rid of as many lumps from the almond flour as you can.
  • Pour wet ingredients into dry ingredients and mix until all of the dry ingredients have absorbed the wet ingredients. Note: This is best done with a rubber spatula.
  • Place the dough in the fridge for 20-30 minutes (up to overnight) and preheat oven to 350 degrees F.
  • Roll the dough (I like to use a small ice cream scoop for this) into balls about the size of a quarter and place on a parchment paper (or silpat) lined cookie sheet. NOTE: These cookies will not spread, so you can place close together.
  • Use a fork, the back of a spoon, or your index and middle fingers together to flatten each dough ball. Spray the fork, spoon or your fingers with a little cooking spray first to prevent sticking.
  • Bake cookies for 10-14 mins until edges are golden brown.  10 minutes will leave the cookies a little doughy; 14 will make them crunchier.
  • Cool cookies for at least 5 minutes before serving.

Note: These cookies freeze well, and they’re just as good right out of the freezer as the oven. They travel well in Ziploc baggies or Tupperware.
